Manufacturers sometimes quote the *per-side bevel* (the angle of one face to the centre line) and sometimes the *total included angle* (the angle between the two faces). The relationship for a symmetric double-bevel is *included = 2 × per side*. Bands assume a symmetric double-bevel ground on tool / stainless steel hardened to HRC 55–62. Below the band the edge chips easily; above the band the knife stops cutting well. *Single-bevel knives* are the exception — the included angle equals the per-side angle (Yanagiba, Usuba, Deba). *Razors and scalpels* often have an even finer secondary micro-bevel (≤ 17° total) but the actual blade is usually a *convex (Moran) or hollow grind* that trades a hair of sharpness for durability. - · **Per-side ↔ included — how to remember**: picture two boards opened like a book. The angle each board leans from vertical is the per-side bevel; the gap between the two boards is the included angle. Opened symmetrically, included = 2 × per side. A single-bevel knife is the case where only one board is angled and the other stays vertical — so included equals the per-side angle directly.
- · **Sharpness vs toughness is always a trade-off**. The thinner the included angle, the easier the edge slices food but the easier it chips under lateral stress. A straight razor (10–17°) cuts hair effortlessly but cannot touch anything hard; an axe (70°+) cannot slice tomato but can split birch. A two-step grind (main bevel + micro-bevel) is the usual compromise.
- · ***Single-bevel knives (Yanagiba, Deba, Usuba) are the most misleading*** for angle quotes: a maker who advertises "15°" almost always means the *total* angle of the single ground face (a single-bevel has no symmetry to be ambiguous about) — do not double it. The seller says my knife is "15 degrees" — how do I tell if that means per-side or total included?
Defaults: (1) Western double-bevel chef knives (German / French brands: Wüsthof, Henckels, Sabatier) normally quote *per side*, so "20°" means a 40° included angle; (2) Japanese double-bevel chef knives (Sakai, Tojiro, Shun) historically went both ways but increasingly quote *per side* to align with international convention; (3) Japanese single-bevel knives (Yanagiba, Deba, Usuba) always quote the *single ground face total* — "15°" means 15° included; (4) outdoor / hunting knives (Mora, Buck) usually quote per side, so "25°" means 50° included; (5) sharpening jigs (Lansky, KME, Edge Pro, Wicked Edge) always show *per-side* angles. When in doubt, measure the actual knife — a card protractor, dedicated wedge gauge or even a silhouette photo will give you the true included angle, which you can divide by 2 to recover the per-side bevel.
I want to thin my Japanese Santoku from 20° to 15° per side — will the edge chip?
It depends on the steel. HRC 60+ high-carbon and powder-metallurgy steels (VG-10, SG2 / R2, Aogami Super, ZDP-189) hold a 12–15° per-side bevel reliably, especially with a *micro-bevel* (a 5° secondary bevel on the very edge — typically a 18° per-side hairline strip above the main 15° bevel) to absorb impact. Ordinary stainless below HRC 58 (VG-1, AUS-8, 420HC) should not go below ~ 15° per side; daily use produces micro-chips. Practical recipe: thin to 18° first, run it for a month, drop to lower only if chip-free; add a micro-bevel if you skip the slow ramp; stop at 17° if you do not want a micro-bevel; and *never use a thin Santoku on bone* — the chips will look like saw teeth and the regrind is more expensive than buying a dedicated cleaver.
Is a single-bevel (Yanagiba) actually sharper than a double-bevel (Gyuto)?
At the same total included angle, *single-bevel does not cut sharper* — sharpness is purely a function of the *apex radius*. What single-bevel buys you is three things: (1) *a smaller achievable apex* — because the back face is flat, the final polish can be done at near 0° on a water stone (Uraoshi for the back, Shinogi for the front), reaching < 0.1 μm at the apex versus the 0.3–0.5 μm typical of a real-world double-bevel; (2) *push-cut release* — the food slips off the flat side without sticking to the blade, so successive sashimi cuts stay clean and the fish flesh does not bruise; (3) *asymmetric cutting path* gives the user fine control for peeling, slicing and shaving that no double-bevel can match. The cost: peeling needs training; left-handed single-bevels are scarce and expensive; sharpening is twice the work (you must grind the front AND polish the back). Buy single-bevel because you want the *technique*, not because you want raw sharpness. For everyday vegetable prep a sharp double-bevel is the right answer 90 % of the time.
