Moderate
170–190°C — the standard band for cakes, biscuits, pastries and most bread.
Formula
°F = °C × 9/5 + 32. Gas marks follow the BBC Good Food chart (Gas 1 = 140°C = 275°F, ≈ +10°C / +25°F per step).
- · Reference chart (°C / °F / Gas): 110 / 225 / ¼, 120 / 250 / ½, 140 / 275 / 1, 150 / 300 / 2, 170 / 325 / 3, 180 / 350 / 4, 190 / 375 / 5, 200 / 400 / 6, 220 / 425 / 7, 230 / 450 / 8, 240 / 475 / 9.
- · Gas marks are the dial scale on UK and Commonwealth gas ovens — they are heat levels, not absolute units.
- · °C ↔ °F uses the exact formula. °C ↔ Gas Mark snaps to the nearest standard chart entry because gas marks are a discrete scale.
- · Fan-forced (convection) ovens usually run 10–20°C cooler than a conventional setting — if a recipe quotes a conventional temperature, drop the converted value by ~20°C for a fan oven.

Frequently asked
What is 180°C in gas mark?
180°C is Gas Mark 4, equivalent to 350°F — the standard "moderate" baking band for cakes, biscuits, pastries and most breads.
What is 350°F in Celsius?
Exactly 176.7°C, but recipes universally round to 180°C because home oven dials work in 10°C steps. Treating 350°F = 180°C = Gas Mark 4 is the convention.
How should I adjust for a fan-forced (convection) oven?
A fan circulates hot air more evenly, so food cooks about 10–20°C faster. If the recipe quotes 180°C (conventional), set a fan oven to about 160°C and shave 5–10% off the bake time.
Why do gas marks start at ¼ instead of 0?
The gas mark scale was set up in 1940s Britain. The lowest usable bake temperature (~110°C / 225°F) was assigned to ¼, and ½ to 120°C / 250°F. Whole-number marks each add 25°F. Mark 0 effectively means "off", so it is not used as a baking step.
